Well, I'm not sure what you're trying to do. Here's the setup I have. I have one server named ns1.mydomain.com. I created a virtual domain ns2.mydomain.com with a 2nd IP, and another one like mydomain.com

If my server is down who cares...

I don't think so. The way it works is if the 1st nameserver does not answer, it will ask the 2nd nameserver, if the 2nd namserver doesn't answer, it will ask the 3rd nameserver, etc, etc... So, if the 1st nameserver says sub.domain.com doesn't exist, it won't ask the 2nd nameserver.
