Using the form would require a little CGI scripting to get the text and write it to the file, but it would do the trick.

The hardest part of that would be writing the script, but there probably is a free script out there that will take the contents of a form and write to a file. Try out:

http://www.cgi-resources.com

for the script.

Once you have that, you need to create the form and the text file (CHMOD to be readable and writable), and then it should do the trick.

Sounds like a fine idea to me. Assuming you want your content managers to use text only. You could have the SSI link to a said text file which could be on your content managers server (so that he could edit it at will)

If you want all your visitors to contribute it should be possible to have them fill in a form which writes to a text file.
Am I on the right track?

Sorry to come in late on this one...
Are there any sort of text formating options that work with SSI. I'm interested in users having access to texts files that they can edit, which I can then <--#include in the web page. This way everyone responsible for the content of the page isn't required to have any html knowledge (an idea they seem to like), and know one has a chance of messing anything up (an idea I like).

I would agree. Using SSI can save you tons of time in updates and can give your site a consistent look and feel. If your server supports SSI, I would highly recommend using them.

Good luck Tracey!

Yes, I would recommend using SSI because they make updating a lot easier. It is not a question of whether the browser supports it, but the server. If the server supports it, every browser should be able to view it properly. This is most useful for sidebars, copyright information and headers, in case they ever need to be changed. It may seem kind of strange your first time using them, but they will save you loads of time in the end. Good luck!

SSI's have become an essential part of my site since I started using them many months ago. They make updating a breeze if properly used and I would highly recommend them to you.
