Yeah hidden text will only get you in trouble, and it doesn't help anyways... yet so many people still use it. I wonder why people still try.

Keyword stuffing - Google wants you to use keywords ina "natural" fashion so that the page reads well to the human user. If you have - a silly example - one keyword appearing 20 times in 3 lines of text, then this is not "natural" and Google thinks you are trying to spam. If you have 1 keyword appearing over and over int he title tag, meta tag, description tag, menu items, alt text, h1-h6 tags and content, then again Google will think you are trying to spam them. This is likely - sooner or later - to get you a penalty.
Solution? Sprinkle keywords in a "natural" fashion across your meta tags, h1-h6 tags, alt text, content urls etc.

Doorway pages are web pages that are created for spamdexing, this is, for spamming the index of a search engine by inserting results for particular phrases with the purpose of sending visitors to a different page. They are also known as bridge pages, portal pages, jump pages, gateway pages, entry pages and by other names. Doorway pages that redirect visitors without their knowledge use some form of cloaking.

Why does buying expired domains should be considered as a bad technique? I don't see any not-so-good technique with that thing?
