Depends on the size of the site and what the site is.
Sometimes it's quicker just to rattle one off manually.
Of course for sites with lots of pages then a generator is often helpful. Like using the xml site map on Wordpress, would be most of the day spent doing a sitemap without it.

Don't bother unless you have a massive site that either updates daily or has content that is hard for the bot to discover. Google use sitemaps to help discover new urls, but they say themselves that they don't guarantee to include any url in their main index. Unless you have over 1000 pages in your site then your navigation system should be perfectly adequate. If it isn't then you need to re-think your navigation system or get some extra links deep into the site.

I mostly use simple HTML page with links to all the pages if site consist of less then 10 page and if website consist of more then 10 pages then I prefer to use sitemap generator.

i havent used anything for making XML sitemaps, i have coder who used to do it for me, after designing it, he used to run the code on some cooktop tool, so this generator is something that will help me in the future

Another good place for this is a site, that even if not updated often, can be updated by different people, especially ones that don't know anything about site maps, either as a webpage or as a XML for search engines.
I'm writing a CMS and one of the things I am including it the auto generation of this for the site when a page/event/news item is edited,created or deleted.

XML site maps help alot,... i experimented with google sitemaps, and within days the search ranking of my pages changed, more pages got indexed and some of them came on the first page for some keywords..

I have use both HTML and XML sitemap for my website.
As a seo point of view XML sitemap is very important for website indexing and HTML sitemap is for visitors so that they can find all pages on your website if the site is large.
