I remember reading something about how restaurants will highlight items on a menu that they get the highest margin on. Using design to encourage you to buy something that makes them the highest profits.

How do you imagine this could be put to use with a website navigation?
I believe that it should be with very different titles of the categories, maybe a separate column for the sub categories and some sort of highlighting
Maybe something like a more structured tag cloud.

Or just using different design treatments to promote the areas you want people to go to. Maybe use a highlighted products box to show off your highest margin products. Or, like in the menu, highlight extravagant, expensive items to make everything else seem like a bargin.
