I would like to incorporate an opt-in newletter/ezine on my internet marketing website. I will be sending out emails to subscribers one a month. Does anyone have any suggestions on this? Any "how to" websites out there on this?

You can use newsletter software, or publish the newsletter online and send out html emails about it.
What do you want to know about? How to what, I mean. Write a newsletter? How to make an opt-in mailing list?

I just want to allow people to enter there name and email address only to receive monthly "informative" emails. So I need the code for the site and the ability to send the emails. I'm hoping over time that I can generate thousands of subscribers.

Then your best bet would be to search code suppositories such as hotscripts.com for mailman or newsletter software that you can install and use.

On this topic, has anyone used a service for email newsletters? Do you think there are advantages to doing it yourself?

I say do it yourself. There are a couple of bulk mailers out there with pretty good options on them which I've used effectively for newsletters.
