Well... firstly you need to make sure you have a good working relationship with the people you outsource to. You need to be able to communicate effectively. You should also have very strict contracts with penalties in place if they don't meet targets.
Also, if they will be coding on your behalf but you may have to edit your code in the future, you need to ensure that they follow your working practices to the letter to ensure you can make sense of their code in the future (for instance, comments in code should be in your language, not necessarily theirs)
